We roast small, on Mondays, in Vancouver.
Every bag is roasted in batches of fifteen kilograms — small enough that we can taste each profile twice before it ships. Filter tones in the morning. Darker tones in the afternoon, when the room has settled.
The regulars stay in rotation because they earn it. The pressings come and go because the lots come and go. That's the whole arrangement.
